Barbecue Cups

This has been a family favorite for years! It is such a simple, yet tasty dish we call, “Barbecue Cups,” straight from my own Mama’s kitchen. My husband’s eyes always light up when I tell him we are having these for supper.  You can pair them with all sorts of stuff… green beans, Mashed Potatoes, sweet potato fries, tater tots, corn, a small salad…the combinations are endless. These just make everyone feel happy and full by the end of the meal.  IF there are any leftovers, they make for a great packed lunch the next day!

Barbecue Cups

Reach For: 

1 LB Ground Beef
2/3 Cup Barbecue Sauce
1 TBSP Minced Onion
1 TBSP Brown Sugar
1 Can Refrigerator Biscuits
Grated Cheddar Cheese

Instructions: 

Spray muffin tin lightly with cooking spray. Brown meat. Drain excess grease. Mix in barbecue sauce, onion, and brown sugar.  Flatten biscuits separately and form each one in muffin tin. Put in meat mixture. Top each with grated cheese.  Bake approximately 10 minutes at temperature on biscuit can.

Yields: 10 Servings
