Garlicky Baked Shrimp

I’ve told you before that when it comes to seafood, I hate fish, but truly enjoy most shellfish. Shrimp, in particular is something I really look forward to on special occasions.  This ole girl goes for the popcorn shrimp, the shrimp scampi, the shrimp and pasta, etc. when she’s at the Lobster of Red or any other seafood joint.  I came across this recipe and gave it a whirl.  Let me just say, next time David’s grandparents, who are avid seafood lovers come to town, I do believe I’m going to make this for them!  These bad boys just melt in your mouth and make your heart happy.  Mmmm Mmmm.  Go ahead, give ‘em a whirl.

Reach For:

1 lb pre-cooked, deveined/de-tailed shrimp

4 cloves garlic, minced

2 TBSP white cooking wine

salt and pepper to taste

4 TBSP butter, melted

½ cup Panko bread crumbs

1 TBSP parsley

A couple squeezes of lemon juice

Directions:

Preheat oven to 425 degrees.  In a baking dish, stir together garlic, shrimp, and cooking wine.  Evenly spread out, then sprinkle with salt and pepper. In a separate dish, mix together butter, bread crumbs, lemon juice, and parsley.  Toss shrimp in bread crumb mixture. Bake 15-18 minutes until shrimp are pink and opaque.

Yields: 4 servings
