Sausage Soufflé

Every Christmas my family has one staple meal tradition: Sausage Soufflé.  This breakfast casserole has been a smash hit since before I was even born.  My mom got the recipe from someone’s bridal brunch.  She has told us many a time that this is her very favorite meal ever.  I don’t blame her.  It really is the best breakfast casserole that there is.  I’ve tried other people’s versions of this and they’re simply O.K.  This, however, my friends, is spectacular.  It will make you close your eyes and savor each and every bite.  It really must be at your table.  If you want to make a full meal of it, I can’t recommend more highly than to allow this to be your menu: Sausage Souffle, Cheese Grits, and The World’s Best Cinnamon Rolls.  Um. And you could probably throw some fruit in there to pretend it’s got some real healthiness to it.  Oh, I do hope this will become one of your favorites like it is for us! And remember, you don’t have to just save it for Christmas morning! It can be enjoyed year round for brunch, a great dish to bring to your Sunday School, or even Breakfast for Dinner!  Enjoy!

Sausage Souffle

Reach For:

1   1/2 lb mild pork sausage

9 eggs

3 cups of milk

1  1/2 tsp dry mustard

1 tsp salt

3 slices of bread

1  1/2 cup Cheddar cheese

Directions:

Cook sausage over medium heat until done, stirring to crumble.  Drain well on paper towel.  Mix beatn eggs, milk, mustard, and salt.  Cut bread into 1/4 inch cubes and mix it and grated cheese into wet mixture.  Add sausage, mixing well with a spoon.  Pour into a well greased 13×9 pyrex baking dish.  At this point you can either refrigerate, covered overnight OR bake uncovered at 350 degrees for approximately 1 hour.

Yields: 10-12 servings
