Mushroom Rice

What’s your family’s favorite side?  In my original (Mama, Daddy, Sister & me) family’s meals, our two most frequently consumed sides were Mimi’s Green Beans and Mushroom Rice.  Even non-mushroom lovers just rave over this rice.  It’s so flavorful and wonderful with just about anything.  But our favorite dish to serve it with is roast beef.  It’s just magnificent.  I hope you’ll try it and that maybe it will become one of your family’s favorites like it has been for ours for going on 3 generations!

Mushroom Rice

Reach For:

1 ¼ cup rice

1 onion, chopped

1/3 stick butter

2 cans of beef broth (about 22 oz)

1 small jar of mushroom pieces

Directions:

Preheat oven to 350 degrees. In a small pot, cook onion in butter until transparent.  Butter a 9×13 Pyrex pan.  Mix all ingredients together.  Bake uncovered for about 1 hour and 10 minutes, stirring several times.

Yields: 10-12 servings
