Can I make a little confession to you? Sometimes, I really don’t like to eat salads I make at home. They just don’t seem as spectacular as the ones I get from a restaurant. I think part of it is, I just can’t decide what temperature I like my lettuce when I’m at home. I mean- I can’t decide if I like it room temperature or fresh out of the fridge. But at a restaurant, they just seem to have the salad temperature set jussssssssstttttttt right. I love the idea of having salads at home because they’re so much cheaper, though. I bought a bag of romaine stalks from Sam’s recently. After several blah-ze salads, I wasn’t truly looking forward to our last night of side salads. In desperation, I searched our fridge for something to give it some pizzaz. This combo turned out wonderfully. I liken it to some of the salads I’ve had at Wendy’s, but with a fancier flair. Enjoy!
Apple + Walnut + Goat Cheese Salad
Reach For:
1 bag of Romaine Lettuce, Chopped
1 apple of your choice, chopped
1/3 cup dried cranberries
1/3 cup candied walnuts
1/3 cup sliced softened goat cheese (chevre) or goat cheese crumbles
Raspberry Vinaigrette (to taste)
Directions: I’m not going to lie: just mix it all together and toss with Raspberry Vinaigrette. No sense complicating something so simple. Enjoy!
Yields: 4 servings
