Chicken Alfredo Pizza

Who doesn’t like pizza? Who doesn’t like Chicken Alfredo? Why not combine the two into a fun, yummy dish that will add a little excitement to your menu? I made this a month or so ago in a mad dash to beat the power going out during the midst of a mega storm that passed through town.  Honestly, I made it like 2 hours before we were going to eat it, left it on a pizza dish, and wrapped it with foil in case the microwave or oven were not functioning the rest of the evening.  I think it only added to the deliciousness of it! It.tasted.like.a.very.expensive.fancy.wood.fired.pizza.  Wow.  I’m drooling just thinking about it.  For your chicken, might I recommend using some leftover Rock Salt Roast Chicken?  You can use a pizza crust mix, or you can use a great home made recipe like this.  Anyway you do it, honey, it’s going to be off the chainnnnnnnnn!

Chicken Alfredo Pizza

Reach For: 

2 TBSP butter

1/4 tsp garlic powder

1/8 tsp onion powder

1 TBSP flour, and extra for dusting

1/2 cup + 2 TBSP heavy cream

1/2 cup + 2 TBSP milk

1/2 cup Parmesan Cheese, shredded

salt, to taste

pepper, to taste

1 cup mozzarella cheese, shredded

6 TBSP real bacon bits

1 cup chicken, cut into slivers

2 TBSP green onions

Directions: 

Prepare pizza dough according to instructions.  Preheat oven to 450 degrees.  Roll pizza dough on pizza stone.  In a sauce pan, melt butter, onion powder, and garlic powder. Whisk in flour, and stir constantly for approximately 1 minute. Slowly pour in cream and milk while whisking rapidly. Continue to stir constantly while bringing mixture to a slight boil.  Allow to bubble for about 20 seconds, then remove from heat.  Add parmesan, salt, and pepper and stir every now and then.  Spread sauce onto pizza.  Top with cheese, bacon, chicken, and green onions.  Bake for 14-16 minutes until golden brown.

Yields: 4 servings
