Mimi’s Meatloaf & Sauce

There are a handful of things that come out of my kitchen that I’ve never had anyone else top.  No offense to the rest of the world, but I just have a hard time eating these things at a restaurant or someone else’s home and not being disappointed.  Typically, I do not order these items when eating out because I know there will be no contest.  Humble, aren’t I? Hey! What is is. What ain’t aint.  Mimi’s Green Beans, Apple Pie (recipe coming in a few weeks!), and Mimi’s Meatloaf are at the top of my “no-contest against these” list.  When I worked for our church in Nashville, one of the custodians became a friend of ours.  Everyone knew that if you wanted to brighten Val’s day, you didn’t bring him sweets.  No sir, you brought him meat.  So one day, I brought him meatloaf, mashed potatoes, and green beans with enough for him to get lunch and dinner out of.  After lunch, he brought my dishes back to me spick and span.  He had eaten it all.  He begged me for the meatloaf recipe and I happily obliged.  Mimi got this from a dear family friend years ago named Billie Barrows.  She was the wife of long time Billy Graham Worship leader, Cliff Barrows.  She has been in Heaven for years now, but this recipe she passed along to our family eons ago is a treasured gift that reaches beyond Heavens’ gates right to our tables to remind us of friendship and years of ministry together around the world.  What recipe do you have that you can reach beyond your reach with even after you draw your last breath in this life?

Mimi’s Meatloaf

Reach For:

2/3 cup dry bread crumbs

2 slightly beaten eggs

1/2 cup milk

1/2 cup catsup

2 lbs ground beef

1/2 cup chopped onion

1 tsp salt

1/8 tsp pepper

1 clove garlic, minced


6 Tbsp brown sugar

1/2 tsp nutmeg

2 tsp yellow mustard

2/3 cup ketchup


Preheat oven to 350 degrees. Soak crumbs in milk, eggs, salt, pepper, and garlic.  Mix in ketchup, beef, & onions with hands.  Place in loaf pan and bake for 55 minutes. (Sometimes I stretch mine and put it in two loaf pans.  It just comes out a little shorter that way).  Meanwhile, mix together ingredients for sauce.  Pour over cooked meatloaf.  Best served with mashed potatoes and Mimi’s green beans.

Yields: 6-8 servings
