Spicy Baked Sweet Potato Fries

I’ll be honest, until a couple years ago; I wanted nothing to do with sweet potatoes.  I know, I know. I’m a freak.  I was a Southern Belle who did not enjoy a good sweet potato.  {Shriek} {Gasp} But then there were these awesome looking fries.  So, I decided to give them a go.  And there you go, I enjoy them now!  Pretty much only in the form of fry, but hey, it’s a healthy sort of fry! No oil, just good spices with a healthy side option.  These are great with Barbecue Cups, My Tried and True Burgers, and more!

Spicy Baked Sweet Potato Fries

Reach For:
2 medium sweet potatoes  (approx 1 lb total)
½ tsp salt
½ ground cumin
½ tsp chili powder
½ tsp paprika
¼ tsp ground black pepper
Coarse sea salt or kosher salt (optional)
Ketchup (optional)

Directions:
Preheat oven to 425 degrees.  Lightly spray a baking sheet with cooking spray.  Scrub sweet potatoes and cut lengthwise into quarters, then cut each piece in half lengthwise and widthwise.  Place potatoes in a single layer in pan. Mix spices in separate small bowl.  Conservatively spray potatoes with cooking spray and sprinkle spices over top.  Bake 20-30 minutes until potatoes are tenderized, after turning once.  Sprinkle with salt if desired and have ketchup available for dipping!
