Gina Neely’s Spicy Creamed Spinach

I was channel surfing one day and landed on “Down Home with The Neelys” on the Food Network.  Mesmerized, I watched for the next thirty minutes as they tore up the kitchen with Southern goodness.  One of the feature recipes that day was Gina’s Spicy Creamed Spinach.  As soon as the show was over, I googled away to find it.  I’ve been cooking it every since and devouring it each time.  My husband isn’t as much of a creamed spinach fan as I am.  You put a plate of this stuff in front of me, though, and I turn into Popeye as I devour it! The nice thing is that you can add or take away from the heat of this as much as you want.  No matter how spicy I make it, this is one of the best side dishes that comes out of my kitchen.  Serve it with a steak, dish it up with your Thanksgiving turkey, or just sit down with a bowl of it all to yourself.  You’re going to love it!

Reach For:

2 TBSP butter

2 TBSP olive oil

2 shallots, chopped

3 Garlic cloves, minced

1 ½ tsp red pepper flakes

¾ cup heavy whipping cream

¼ tsp ground nutmeg

¼ cup grated Parmesan

salt & pepper to taste

3 heaping bunches of fresh spinach (or 1 large bag of frozen spinach)

Directions:

Boil Spinach with a little bit of salt.  Drain and dry with a cloth towel, getting as

much moisture out as possible.  Heat a large sauté pan, melting butter and olive

oil.  Sauté garlic and shallots until fragrant and tender.  Stir in red pepper flakes as

well as spinach.  Add salt and pepper to taste.  Briefly sauté, then add heavy cream,

nutmeg, and Parmesan.  Reduce the combined ingredients until it has thickened for

about 2 minutes.

Yields: 4-6 servings
