My husband and I love Greek Food. In fact, we enjoy a lot of Mediterranean foods. Anytime we travel to a big city, we look for a good Greek restaurant, where we are sure to find a fabulous Gyro. We don’t have a spectacular Greek spot in our town, so I decided to search for recipes that would hit the spot when we got a hankering for a Gyro. I stumbled across the recipe for this on my little quest and it has been a favorite ever since.
Greek Chicken Pita Folds
Reach For:
1 medium onion, sliced
1 clove garlic, minced
1 lb boneless, skinless chicken breasts
1 ½ tsp lemon pepper
½ tsp dried oregano
1/3 tsp ground allspice
½ cup plain yogurt
4-6 pita pocket
Optional toppings: feta cheese;1 tomato, chopped; ½ cup chopped cucumber; 1 medium red bell pepper, sliced into thin strips; red onion, chopped
Instructions:
In slow-cooker, combine onion, garlic, chicken, lemon pepper, oregano, and allspice; mix to coat chicken with seasoning. Cover and cook on LOW for 4-6 hours. Shred chicken, stir yogurt into mixture, and spoon into warm pita pockets. Put toppings in pita if desired.
Yields: 4-6 servings
