I joined Weight Watchers again last week. If I had just stayed on in it in the first place and kept up the healthy lifestyle adjustments, I would have been fine. But, life got in the way. I think the biggest thing was that we moved last year. Getting a whole household packed up in a week, then taking weeks to unpack it by yourself tends to make cooking at home very inconvenient. So that’s what started it. Then I had to go back to Nashville by myself and sort through the rest of our belongings and bring what I could back. Then we got hit by a car in December. Then on Christmas day the whole family got the flu. Then the day after Christmas, I had a pre-cancerous mole taken off my arm which took months to feel better. So yeah, my normal routine wasn’t on par this past year and Weight Watchers went out the window for awhile. And when I was in the kitchen, oh sweet comfort food it was! Well, I’m pumped to start it back up because it really works. I cannot do diets that cut things out. I end up getting so frustrated that I just binge and quit. But, I can do portion control with really great food. I love to eat. I really do. I do eat to live, but sometimes I do feel like I live to eat because the food that God has made is just so wonderful! This recipe is an awesome way to have a healthy side with a little pizzaz. I appreciate fresh takes on weight loss staples. I’ve adapted it a little to make it more Weight Watcher Friendly. A 1/2 cup portion of this is 3 points plus. See…that’s not so bad! When you’re feeling overloaded on fruits and veggies…kick it up a notch with this great recipe! Need some ideas of what to serve it with? Coconut Lime Indian Chicken, Baked Smashed Potatoes, Rock Salt Roast Chicken, or Garlicky Baked Shrimp are all excellent options!
Lemon Parmesan Broccoli
Reach For:
1 cup broccoli floretts
2 garlic cloves, minced
1 TBSP olive oil
1 tsp lemon juice
3 TBSP parmesan cheese, shredded
1/4 tsp kosher salt
Directions:
Steam Broccoli for 5-10 minutes, depending on how you like its consistency. Drain, and set aside. In a skillet, saute garlic and oil until fragrant. Place broccoli in skillet and toss with garlic and olive oil, sprinkle with lemon juice, salt, and parmesan until well coated.
Yields: 2 servings
