S’mores Pie

Oh my goodness, guys.  This is really something special.  I’ve been on a marshmallow kick lately.  I love apple pie and all…in fact, it’s my favorite usually, but really, ummmm, this is even more American than that.  What says the good ole U-S-of-A more than S’mores and Pie? We should start saying, “American as S’mores Pie.”  The night before I was to serve it (for Memorial Day in fact), it took all the self-control I could muster up in my soul to not dive in like I was in a pie-eating contest.  Really.  I did try a bite of the crust and realized that my world was about to be rocked the next day.  Oh boy. You’re going to love this!

S’mores Pie

Reach For:

1 stick of butter, room temperature
¾ cup white sugar
1 egg
1 tsp vanilla
1 cup all purpose flour
1 tsp baking powder
1 cup graham cracker crumbs
7-10 ounces of marshmallow fluff
6 regular sized Hershey Bars, crumbled into pieces

Directions:

Preheat oven to 350 degrees.  Spray a 9 inch pie dish with cooking spray.  Cream butter and sugar well, adding vanilla and egg.  At low speed, add flour, baking powder, and graham cracker crumbs until well combined to a crumbly, yet moldable consistency.  Take half of the crust and press it into pie dish for crust.  Spread marshmallow fluff on crust and then top with crumbled Hershey bars.  Place the rest of the crust dough in between 2 pieces of wax paper, rolling it out to make a top for the pie.  Carefully peel one sheet off and place on top of pie, peeling the other piece of wax paper off.  Bake approximately 20 minutes until golden brown.  Let cool completely before serving.

Yields: 6 servings
